Taco Tuesday : Dessert Version

Easily said.
Who doesn't like tacos, who doesn't like oreos.
Who doesn't like dessert?!?!
Combine the two and you have happiness!
These things were delicious.
 

Taco Tuesday Oreos
-One pack Golden Oreos
-Jelly beans, I used the red and the yellow ones.
-Coconut flakes
-green food coloring
-white sprinkles

Assembly is however you want to make it!
I dyed the cream a shade of brown by mixing yellow red and black food colors with the creme, then putting it back in.
Then I sprinkled the green coconut, topped with cut in half red jellys, and sliced the yellow into random shapes. Top with the white sprinkles for the "sour cream"!

Inception Muffins

Feelin pretty creative this week. Been on a health kick lately, going vegetarian and all, but my best friend is pregnant and in no way shape or form a vegetarian. Soo at the thought of loving her, I decided to make her these treats which I've named "inception muffins".


Basically, it's a cookie inside a muffin with another cookie inside of it.

They look freaking amazing.

Too bad I can't eat them.

But I've heard they are quite the catch 😉






SO EASY.

INGREDIENTS

-1 bag of chocolate chip chocolate muffin mix
-1 pack of soft chewy chocolate chip cookies, with the fudge or caramel inside 
(I just did a combination of the two. one on top, the other on bottom)

STEPS

1.) Preheat your oven. This is common sense. I really hate when people put this on their blog instructions.
2.) Make the muffin mix. Duh.
3.) Start by putting one of the cookies on the bottom of a muffin tray.
Layer it with a little bit of the muffin mix.
Then add another cookie.
Top it with more muffin mix.


Bake it, enjoy!

Make them for friends, make them for a potluck, eat them alone in your sparetime because they're delicious and you don't want to share.

Muffins make me happy. :)

Painted Shoes

I started painting shoes. I think I did a good job at it. Hopefully one day my life will turn into my passion as a career and I will be able to sell things like these. If anyone is interested, contact me at LeahYoung43@gmail.com~


I really enjoy doing this.

It started as making them for myself for fun, then I started getting requests from people at work, and so far I've made 6 different pairs including a cool pair for my boyfriend!

Oh Sweet, Sweet Potato Nachos

Okay, it's kind of hard to keep coming up with variations of recipes involving sweet potatoes that are healthy and low in fat and all that good stuff. 


Just kidding it's really easy. 


Sweet potatoes are so good for you. Benefits
-High in vitamin B6
-Good source of Vitamin C, which produces collagen, keeping your youthful appearance! 
-Contains vitamin D (energy levels, healthy bones, healthy heart, ROTC) 
-IRON! 
-magnesium which is good for relaxation! 

They are just all around good, and delicious. 

Okay so my newest creation came with the emphasis of I hardly had good at my house and was craving something unhealthy but let's be real here, I like being small so that's not happening. 

Thus, sweet potato nachos were born! 
Whose nachos? NAT YOOOS




Effortless really. 

Ingredients
-2 sweet potatoes, peeled and sliced(see below) 
-salsa
-lettuce 
-bleu cheese dressing, or just crumbles, or whatever your heart desires. 
-any other topping you want!


Cut the sweet potato into "chip" like sizes, and  spray them with olive oil and put on a pan. Make sure you do both sides. 
Bake for 12 minutes at 400°F , flip them, then continue for another 8 minutes or until they're at the crunchiness or baked-ness (is that a word?) that you prefer. 

Let them cool for about 5 minutes so they're still warm, then simply dress them with what you like on nachos! 

For me, I put salsa, sour cream, lettuce and bleu cheese dressing on top. UHHHmazing!

Red Velvet Pie Cake

II am thankful for food, friends, family, social gatherings and a reason to make delicious cake that I would otherwise eat entirely to myself.


Thus, this red velvet cake inside a graham cracker pie crust covered in chocolate mousse and choco chips was created! 


Who would have known this would be so delicious? 

Okay, I had my assumptions.

So easy: 

INGREDIENTS: 
Red velvet cake mix
2 Graham cracker pie crusts
Jello - Chocolate flavored pudding
Plain Yogurt 
Cool Whip tub thawed
Pumpkin purée 
Bag of mini chocolate chips

STEPS: 
1.) Mix the red velvet cake mix with pumpkin. Pumpkin purée is basically a substitute for ALL the inner ingredients required on cake boxes, and it's the healthy alternative. I use this for almost everything, it never masks the flavor. It's perfect. I love pumpkin! 
2.) Pour about half the mix into the graham cracker pie crust. The whole thing will not fit in one, so you could make two pies which would be smart, or you could put it aside and make red velvet cupcakes like I did and eat them all the same night.  
3.) Bake the cake for about 36 minutes, or until the center comes out clean when you stick a tooth pick in. Follow the temperatures on the cake box. 
4.) While it's cooking, you can make the chocolate mousse. Easy as pie! (Pun intended) Combine the jello mix, yogurt, and cool whip. Let it sit in the fridge to garden a little while the cake is cooking. 
5.) When the cake is done, let it cool for about 20 minutes so the mousse doesn't melt when you put it on too. Then, do the obvious. spread the chocolate mousse on top, sprinkle with the mini chocolate chips.

Double Stacked Chocolate Chip Peppermint Cheesecake Cookies


  Yep, may have outdone myself on this one. 

I just really love cheesecake, but someone at work requested that I make chocolate chip cookies, but there's no way I could make JUST chocolate chip cookies!!! 

So I had to add some craziness to them. 

Thus, whipped cheesecake was the first addition. Until I was in the store getting ingredients, and saw the peppermint bark! 

TIS' THE SEASON. 



Finally, when I was making the actual cookies, they were way to big so I had to cut them in half. Then once they finished baking they were too small! So the double stack was created and it was amazing. 

They lasted 3 days. 

I might be having regrets, but they were worth it. 

BASiC iNGReDieNTS. 
(Remember when people texted like that, never again.) 
-chocolate chip cookie dough
-Jello Cheesecake flavor 
-Cool Whip (one tub, unfrozen but cold)
- Plain Yogurt ( just one cup.  I used vanilla, it was delicious)
- Ghirardelli Peppermint Bark 
-at least an hour of time. 


STEPS: 

CHOCOLATE CHIP COOKIE
- Start cutting the cookie dough into little pieces. Whatever the back says is the total serving size, just multiply that by 2 so you have that many little pieces. Roll them into little balls so they spread in a perfect circle when they bake. 
- Put them in the oven at 350 FOR 5 MINUTES!! Ok if you want to do 6, go for it but anything else is going to burn them since they are so small! I did 5 minutes and it was perfectly baked yet soft in the middle.... Mmmm... 
- Take the cookies out and allow them to cool down for, say, at least 15 minutes. Perfect time to start the other stuff. 





FOR THE WHIPPED CHEESECAKE  
- easy. Combine all the three ingredients of Cool Whip, yogurt, and Jello Cheesecake Mix. 
- Add in about 3/4 of the Ghirardelli Peppermint Bark chocolate by using a cheese grater. Yes these instruments are used for things other than cheese. STIRRR IT UPPP. 
- Set it in the fridge for the remainder of the time you have to cool your cookies
- You could skip a later step by putting this mix into a plastic bag ( if you've never done this to spread icing on something small , you're missing out. Prepare for amazement ) 




COMBINE THE TWO 
by getting the cookies off the baking sheet, put them on a workable surface and simply I'm a circular motion with the bag of shipped cheesecake out it on the cookie. Do this to all of them, then  put two together. 



WAH-LAH! 

Scrape the rest of the Peppermint Bark over the top to give it the final "effect". 

COOKIE SANDWICH! Of deliciousness.

-Square Pottery Hand Made Plates

-A Bamboo Cutting Board

-A mini Pig.
 


Hopefully I win the lotto soon, or I start making mass amounts of money, or I finally meet a man who wants to be with me and take care of my life. Crossing my fingers for any of those three options.

The third would be beneficial.

Okay, not a real good creative post, but definitely fits with the daydream part, except it's 1 AM and I should really be asleep. So maybe it's a nightdream. But I'm still awake. Not so sure how that one works.
